Chickpea Chocolate Chip Cookies

Ingredients:

 

1 can chickpeas, rinsed & drained
½ cup smooth almond butter
â…“ cup maple syrup
2 tsp vanilla extract
½ tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup dark chocolate chips

Instructions:
 

1. Preheat the oven to 180 C / 350 F.
2. Add the chickpeas & almond butter into a food processor. Blend until completely smooth.
3. Blend in the maple syrup & vanilla extract.
4. Add the baking soda, baking powder & salt, then blend for 30 seconds.
5. Let the batter cool before adding the chocolate chips.
6. Once cooled, stir in the chocolate chips.
7. Drop rounded tablespoons of cookie dough onto a baking sheet. The cookies will spread
slightly so ensure you leave some space in between them.
8. Bake for 12-15 minutes until the cookies have browned on the edges.
