No-Bake Oats & Peanut Butter Energy Bars

Who doesn't love a good peanut butter & oats cookie.

You might just eat them all at once!

Ingredients:

 

1 cup nuts of your choice (almonds, pecans, walnuts, etc).
1 cup rolled oats
½ cup raisins (or any dried fruit of your choice).
2 tbsp chia seeds
½ tsp cinnamon
½ cup peanut butter
¼ cup honey
1 tsp vanilla extract

Instructions:
 

1. Finely chop / crush your nuts.
2. In a bowl, mix chopped nuts, oats, raisins, chia seeds & cinnamon.
3. In a food processor add the above ingredients with the peanut butter, honey & vanilla extract. Blend together.
4. Scrape the mixture into a 20x20cm baking dish. Firmly press into an even layer.
5. Cover & chill in the fridge for 2 hours or until firm.
6. Use a knife to slice into bars.

 

These bars must be stored in the fridge to hold their form.
